Homemade Salami Recipe

Most importantly, you need good quality pork meat with some fat in it. Buy a nice and super fresh piece of pork meat and mince it yourself. For 500g minced pork you need:

  • 15g salt
  • 5g ground black pepper
  • 2g ground dry garlic
  • 30ml cognac, brandy, scotch or what you got
  • optional some thyme, rosemary, mustard seeds, dry chili, or any other herbs to your liking. Note! All spices must be dry!

Mix all ingredients for at least a couple of minutes until the meat gets sticky. Using gloves is best.

Divide into 4 pieces, and form nice sausages. Roll each sausage in fine yellow corn flour or instant polenta.

Place the sausages on a clean plate in the fridge. Turn them daily for the next four weeks. After four weeks, the salami is ready to enjoy.

Store the salami in a paper bag in the fridge. Enjoy!

And here is a video of how I do it. Please like and leave a comment under the video if you liked it.
